- 1 bag of riced cauliflower
- 2 carrots diced (for ease of preparation you can use frozen carrots or frozen peas and carrots)
- 1 stalk of celery or 1/2 onion
- 2 tablespoons of coconut oil
- 1 tablespoon sesame oil
- 1 tablespoon soy sauce

Prep time is 5-10 minutes, cook time is 20 minutes.
Melt coconut oil in a large pan and add riced cauliflower, cook about 10 minutes on medium to high heat. Then add diced carrots, celery, onion or any vegetables you would like in your fried riced cauliflower. Cook another 10 minutes, then add soy sauce and sesame oil. If you would like to make this a one dish meal you can add shrimp, beef or chicken. Mushrooms are also a great addition.
If adding chicken, beef or shrimp (you don’t have to cut unless they are large), cut into small pieces and cook directly in the pan until cooked. Cooking time depends on the size of the pieces or shrimp.
