Here I am again, phoning home and asking, “What do you want for dinner?” I was working and then I had to do some light food shopping for my parents. As I am walking into the supermarket my daughter says, “Do we have food to make stir-fry.” I say, “No, but I can buy what we need.” Easy enough, I knew I had white rice, sliced steak and shrimp in the freezer and teriyaki sauce in the fridge, 2 bags frozen Asian medley vegetables and a can of water chestnuts and I’m ready.
Prep time approximately 5 minutes, Cooking time 30 minutes
- 1 cup of white rice
- 2 cups of water
- 1 tablespoon sesame oil
- 2 bags of frozen Asian medley vegetable mix
- 1 can water chestnuts
- 1/3 cup of teriyaki sauce
- 10-20 shrimp (small or medium)
- 1 steak sliced in strips (uncooked or cooked if you happen to have leftover from another meal this is a great time to use it)
First boil the water to boiling and then add the rice, cook as directed. If you are really in a hurry you can buy rice that cooks in 90 seconds in the microwave. In a large frying pan put 1 tablespoon of sesame oil and heat on medium heat, add 2 bags of Asian vegetable medley and mix with oil and heat until hot, then add water chestnuts and teriyaki sauce, mix well and let cook a few more minutes then add steak if uncooked if cooked add after the shrimp. Cook everything together for about 5 minutes.
Serve with or without rice. This night, I actually had rice leftover from the night before so I just heated it up. Try to make things as easy as possible.
